Shrimp lo mein


 

Good news! It’s possible to eat both Asian and healthy!

* Ingredients:

200 g of Chinese noodles
* For the sauce:
° 3/4 cup no salt added chicken broth
° 1/4 cup of light soy sauce
° 2 c. hoisin sauce
° 2 c. rice vinegar
° 2 c. of honey
° 2 c. cornstarch
° Thai chili, chopped to taste
* For the stir-fry:
° 1/2 yellow pepper
° 1/2 red pepper
° 1 clove of garlic
° 3 green onions
° 1 c. sesame oil (unroasted)
° 1 bag of medium shrimp (size 31/40), raw and peeled, 340 g
° 20 snow peas
° 1 c. chopped ginger

* Preparation:

In a pot of boiling salted water, cook Chinese noodles for 5 minutes or according to package directions. Drain.
In a bowl, mix ingredients about sauce.
chop peppers, garlic & green onions .
In a pan , heating oil on medium heat. Cooking shrimp for 3 to 2 min . Reserve on a plate.
In the same pan, cook the vegetables with the garlic for 3 to 4 min .
Add the ginger and the sauce. Bring to a boil.
Add the shrimp and noodles. Heat 1 minute over medium heat, stirring constantly.
