Tacos and Indian Fry Bread


 

In the past, it was often eaten with soups or stews.

Nowadays it is found in powwows (Indian show)

or summer fairs or food trucks.

They can be tasted in a savory version garnished with chili, tomato, grated cheese, lettuce and jalapeño, or sweetened with honey or sugar and cinnamon.

 

* Ingredients:

 

° 250g of flour

° 1 tablespoon of baking powder

° 1/2 teaspoon of salt

° 235 ml of lukewarm water or milk

° 500g of ground beef

° 1 onion, diced

° 2 garlic cloves, finely chopped

° 2 tablespoons of taco spices or:

° ½ tablespoon chili powder

° 2 teaspoons of paprika

° 1 teaspoon of cumin

° 1 can pinto or red beans, drained and rinsed

° 1 small can of diced tomatoes or fresh tomato (3)

° 1 tablespoon of olive oil

° salt and pepper to taste

 

* Toppings:

° Grated cheese parvé

° Lettuce cut very thin

° Diced tomatoes

° white onions

° Chopped coriander

° Avocado / Guacamole

° Salsa

° fresh cream

° jalapeño

 

* Sweet fillings:

° honey

° Butter

° sugar

° cinnamon

 

*Preparation:

Start by preparing the dough:

In a large bowl put the flour, baking powder and salt, add lukewarm water

Mix the dough gently until it forms a nice, sticky ball.

Cover and let rest for 20 minutes.

In a large skillet over medium heat, add a tablespoon of oil and sauté the onion and garlic.

Add the minced meat and break it up, add the spices, mix well and cook for a few minutes.

Add the crushed tomatoes and the beans, mix well and cook for a few more minutes.

After 20 minutes of rest,

On a work surface, divide the rested dough into balls equivalent to a tangerine. Work with floured hands, one piece of dough at a time (keep the other pieces covered with a towel), roll the dough on a lightly floured surface then either using a rolling pin or with your hands stretch the dough slightly as you go, not too thin, form a circle.

In a large, deep pan, heat some oil,

Make a small hole in the middle of the taco (see video) and gently drop the taco into the hot oil, brown then turn and cook the opposite side until golden brown.

Remove and drain on paper serviettes.

Serve hot ; Garnish every taco with the minced meat preparation – beans, tomatoes, onion, lettuce, cheese, cilantro and finally if you want a little chili. Go with the feeling there is nothing better!
